Loaded Mashed Cauliflower

Impress your family with this Personal Trainer Food–approved side dish!

cauliflower bacon cheese savory side dish perfect for fat loss over the holidaysPersonal Trainer Food Ingredients:
2 bags of Cauliflower or 8 – 10 ounces Cauliflower, chopped into bite-sized pieces

Additional Ingredients:
1-2 tbsp Butter, melted
2-4 slices Bacon, cooked
1 small bunch Chives, chopped
½ cup Shredded cheddar cheese
Salt & Pepper, to taste

 
Instructions:

  1. Heat Cauliflower in the microwave. Once heated, remove from bag and place in a microwave-safe bowl.
    Mash cauliflower with a potato masher or fork. Add butter, salt, and pepper and continue mashing until no large chunks remain.
  2. Mix in half of the shredded cheddar cheese, chives, and bacon. Microwave for 30s or until cheese melts.
  3. Top with remaining cheese, chives, and bacon. Enjoy!
